You really are what you eat. In this course students will set out on a journey to explore their relationship with food. The journey will take students on a tour of the Earth’s atmosphere, soils, and waters; inside human cells to examine how food is utilized, and to remote corners of the globe to evaluate the far-reaching effects that food choices have on the planet. Connections with food are explored both within the local community and around the world. Decisions regarding what we eat every day have considerable effects on our health, the environment, and the well-being of those involved in the production, processing, and transportation of our food. Students will consider how food provisioning has changed throughout human history, how the rise of agriculture changed the way we feed ourselves, and what this has meant for human health and ecological systems.
