You really are what you eat. In this course we will set out on a journey to explore our relationship with food. This journey will take us through the Earth’s atmosphere, soils, and waters; it will take us inside our cells to examine how our bodies utilize food; it will take us around the world to consider the far-reaching impacts that our food choices have on the planet and on people. We will explore our intimate connections with food within both our local and global communities. Decisions regarding what we eat every day have considerable impacts on our health, the environment, and the well-being of those involved in the production, harvesting, processing, and transportation of our food. We will consider how food provisioning has changed throughout human history, how the rise of agriculture changed the way we feed ourselves, and what this has meant for human health and ecological systems. Ultimately, this course is a personal exploration of how food shapes our lives, our communities, and our planet.
